Simple Sweet Tater Muffins

Ingredients

  • 1 ½ C. Cooked and mashed sweet potato (great use for left over baked sweets)

  • ½ C. Butter

  • 3/4 C. Brown Sugar

  • 1 T. Vanilla

  • 1 Egg, beaten

  • 1 3/4 C. Flour

  • 1 t. baking soda

  • ¼ salt

  • 1 t. cinnamon (optional)

  • ¾ C. pecan pieces

Directions

  • Preheat oven to 350 º

  • Combine sugar, butter and vanilla. Beat well

  • Mix in egg and beat until smooth

  • Combine dry ingredients in separate bowl

  • Combine dry mixture with wet and stir until blended.

  • Spoon into greased or lined muffin tins ½ full

  • Bake 15-20 minutes
