Simple Sweet Tater Muffins
Ingredients
1 ½ C. Cooked and mashed sweet potato (great use for left over baked sweets)
½ C. Butter
3/4 C. Brown Sugar
1 T. Vanilla
1 Egg, beaten
1 3/4 C. Flour
1 t. baking soda
¼ salt
1 t. cinnamon (optional)
¾ C. pecan pieces
Directions
Preheat oven to 350 º
Combine sugar, butter and vanilla. Beat well
Mix in egg and beat until smooth
Combine dry ingredients in separate bowl
Combine dry mixture with wet and stir until blended.
Spoon into greased or lined muffin tins ½ full
Bake 15-20 minutes
