Ingredients
4 C. vegetable oil
2 Lbs. sweetpotatoes, peeled and sliced
2 T. Brown sugar
1 t. Cinnamon
¾ t. Salt
1/8 t. Pepper
¼ t. Cayenne pepper (optional)
1 T. lime or lemon juice (fresh squeezed is best)
Directions
Preheat oven to 375 º
Pour oil into 9 X 13 baking dish.
Place dish in over for approximately 5 minutes or until hot
Add the potatoes and bake for 20 minutes.
In a separate bowl, combine the sugar, cinnamon, salt, pepper, and cayenne pepper
Sprinkle over the semi cooked sweetpotatoes
Stir to coat
Continue baking for 10 minutes or until potatoes are tender and golden brown.
Sprinkle with lime juice just before serving.
