Cinnamon Roasted Sweetpotatoes

Ingredients

  • 4 C. vegetable oil

  • 2 Lbs. sweetpotatoes, peeled and sliced

  • 2 T. Brown sugar

  • 1 t. Cinnamon

  • ¾ t. Salt

  • 1/8 t. Pepper

  • ¼ t. Cayenne pepper (optional)

  • 1 T. lime or lemon juice (fresh squeezed is best)

Directions

  • Preheat oven to 375 º

  • Pour oil into 9 X 13 baking dish.

  • Place dish in over for approximately 5 minutes or until hot

  • Add the potatoes and bake for 20 minutes.

  • In a separate bowl, combine the sugar, cinnamon, salt, pepper, and cayenne pepper

  • Sprinkle over the semi cooked sweetpotatoes

  • Stir to coat

  • Continue baking for 10 minutes or until potatoes are tender and golden brown.

  • Sprinkle with lime juice just before serving.
